Easy Shrimp Ceviche

Hey Chic Baes,

Thanksgiving is done and so are the leftovers! Usually by the 2nd or 3rd day my family and I are over them anyway.
After thanksgiving I like to find the lightest and quickest meal possible and this Shrimp Ceviche was just the thing! 



Ingredients: 
1/2 Bag Cooked Shrimp (Any size shrimp)
1 Small Red Onion
1/2 Small Lemon
1/2 Small Lime
1 Avocado 
Cilantro (fresh)
1/2 Cup Cherry Tomato (cut into halves)
Salt & Pepper to taste


Add frozen shrimp to bowl of lukewarm water to thaw, set aside.


While shrimp is thawing, cut up veggies and avocado, set aside.


Next, drain thawed shrimp and cut into halves (optional). Place into a bigger bowl.


Add veggies and avocado to bowl with shrimp.


Add fresh lemon and lime juice. 1/2 tablespoon each.


Give it a good stir!


Add salt and pepper, and stir. 



All done!!! Add to a bowl and enjoy with chips on the side!

You can eat this as a snack or as meal like I did. This recipe would probably go amazing with a tequila infused cocktail!  I hope you’ve enjoyed the recipe and shoot me holla if you give it a try!
